If so why isn't Mac OS X listed in the OS menu for SA Bugzilla?

If not (given that Mac OS X is approximately FreeBSD) why not?

Yes, it runs there.

It's not in the list because it doesn't seem to be an option to add new OSes 
via the web interface...  (or else I'd add it)

We're going to be moving the bugzilla server to a new machine in the near 
future, and I'll be able to add it right to the DB then. :)
