Take a text document.
Insert a Math object.
Go back to text document.
Right click Math object.
Click item 'Object'.
Notice, you get the Object property dialog.

This dialog has a tab Area and a tab Background. The tab "Area" is the actual one to change the Background. When you click on tab "Background" you are taken to the default tab "Type" of the dialog. When changing from simple "Background" to full featured "Area", removing the "Background" tab has been forgotten.

I propose this as an "easy hack" issue. If Armin (or some other core developer) agrees, please mark it as such and perhaps add a code pointer.

Confirmed on Windows 10 with the latest AOO42X build.
