It should be possible to associate cell formats with a combination of items, that will be re-applied after modifying or refreshing the table.

[ menu ] -> data -> datapilot -> start -> [ "layout" window ] -> [ select data field ] -> options -> more (extras?) -> [ "data field" window - with entries like "function", "type" ... ] would be a great place to have the possibility to format the result cell with the same options that are visible in [ menu ] -> format -> cells.

if explicit formating (in data pilot) is missing a "automated" method could be to use the format of the source colum if the entire column if formated uniformly.

Every update of datapilot must keep the format, not only fonts but also borders, columns width, cell combination, etc.
