Thanks to "Edit symbols" dialog, one can change symbols definition one by one.
It'd be great if one was enabled to change at once the font of all symbols.

The Issue you raised is currently assigned to 'Requirements' pending review, but
has not been updated within the last 3 years. Please consider re-testing with
one of the latest versions of OOo, as the problem(s) may have already been
addressed. Either use the recent stable version:

I'm not the original "issuer", but I agree that would be great to be able to
change all symbol fonts at once, specially because of  Issue 36535
