there should be an easier mechanism to integrate
bundled extensions in oo install sets as described here:
http://wiki.services.openoffice.org/wiki/Extensions_Integration_into_Installation_Set

for example:

deployment during oo install:
- extract oo install files
- create a folder "bundled"
- put all unpacked extensions inside this folder
- run setup.exe

or:

deployment after oo install
- close oo
- copy unpacked extension into "\share\extensions"
- start oo
