symbols (infinite, "partial", nabla...)  isn't user's default font and
apparently can't be changed.
A solution would be to add them to the Catalog, and to allow them to be edited
by symbol editor. See issue 45400.

Currently OO does not offer a way to apply a user defined Font to these symbols
(except "infinite"; this is stored in the catalog section "Special").

The Issue you raised is currently assigned to 'Requirements' pending review, but
has not been updated within the last 3 years. Please consider re-testing with
one of the latest versions of OOo, as the problem(s) may have already been
addressed. Either use the recent stable version:
