If auto-replace is disabled, there is no way to manually enter an en-dash or an
em-dash into the text, other than by "Insert->Special character" dialog box.
Consider assigning a keyboard shortcut for these characters (in MS Word,
Ctrl-NumMinus is used, where NumMinus is the gray minus key on the numeric keypad.)

basically a duplicate.

You should think about configuring your system's keyboard layout to have easy
access to these characters. Either using modifiers or compose sequences...
