I am using RC3 of OOo 2.0 on Windows XP. In Writer, I set my footer such that it
shows "Page 1 of 10" where 1 is the current page and 10 is the page count. I
saved it and exit and then try to open this file (in OpenDocument format) again.
The footer shows "Page 1 of 1" on the first page and "Page 2 of 2" on the second
page and so on till the tenth page. I tried to rectify the errors again, saved
it but the problem persists.

You should insert the page fields out of a table (why do you use a table?) then 
it works.
Why in the table the behaviour is as described, I don't know.

PARTIALLY CONFIRMED:
Yes, the page fields are in a table in the footer. Yes, it shows "Page 1 of 1" 
for Page 1 and so on.
However, simply click on the Page Preview icon and the defect is gone. The 
Page numbers are correct for the footer in every page. The defect is 
still 'corrected' when clicking on the Page Preview icon again and returning 
to the normal view. This 'workaround' can be accomplished with the previously 
attached file. Odd, indeed.

My System: Win XP Pro SP2. OOo 2.0.0 final.

ES->OS: confirmed.
See attaced test document comparing page count in a table and out of a table.
One needs to update the fields mannually ([F9]) to get the correct page count.
This is a regression compared to OOo 1.1.x.
