Can it be made possible to easily switch all aspects of the equation
handling—font sets, brackets, summation & integration signs—from the default to
MS Cambria Math (on systems that have it installed) or the STIX font (whenever
that get released) or Zapf’s Euler font?

Currently it is only possible to change the Variable and Text fonts (in
format.Fonts) to  a new default, but not the symbol fonts. All available Greek
symbols must be re-defined in a new symbol set.
