Those Apple notes may not be most up-to-date but they do introduce the notions of two bindings:

option-escape     (also known as alt-escape)

alt-escape 

(I wonder why Apple have chosen an alternative meaning of alt-escape in Numbers.)

I assume that text completion of the type illustrated at 
http://n2.nabble.com/file/n2283247/alt-escape.png will not be possible in the near future but I'm 
noting this enhancement — for a to-be-associated shortcut — sooner rather than later.
